October is finally here, which means it’s time for all things spooky, sweet, festive, and fun! For the next 31 days, I’ll be sharing Halloween recipes, activities, crafts, decorating ideas, party inspiration, and fun Halloween-themed ideas to help make the most of the spooky season.

And we’re kicking off the month with one of my favorite things: Halloween desserts!

Recipe:

INGREDIENTS-

1 box yellow cake mix

3 eggs

1 stick of butter, melted

1 8oz package of cream cheese, softened

1 lb powdered sugar

1/2 tsp Vanilla extract

Green and yellow food coloring 

Decorator gel for baking in black

Preheat oven to 350°

Prepare the crust-

In a large bowl, combine the box of cake mix, stick of butter (melted), and 1 of the eggs (beaten). Add a few drops of food coloring to tint. 

*I used 6 drops green and 3 yellow* 

Press into a lightly greased 9x13 pan. The mixture will have a thick consistency.

Prepare the filling-

In a clean bowl, combine 2 eggs, the package of softened cream cheese, the powdered sugar, and vanilla extract. An electric or stand mixer will save time but this can be mixed by hand as well.

Pour the filling mixture on top of the crust and bake for 45 minutes to an hour until golden and set.

Once cooled, use the decorator gel to pipe on stitch lines. When this cake is cut into, the green crust is a Oogie Boogie surprise!

Disney at Home: The World of AVATAR Pongu Pongu Night Blossom

Hello all! I am so glad to be back! I am back with a new 'eatspirational' recipe. The summertime heat of August has got me CRAVING the deliciously sweet and tart frozen Night Blossom drink from Animal Kingdom. On my recent visit to Disney World, I had the frozen concoction boozey version with the rum added.  **The Disney trip vlog will be uploaded this weekend :) Be sure to check out my Youtube channel for the happiest adventure on Earth! I like  most sweet frozen drinks so the Night Blossom was definitely on the must-try list. Tangy and sweet layers of desert pear and green apple are topped with popping boba and as I mentioned before, there is a 21+ version that includes a heavy handed portion of rum. The beautiful result is an 'Instagram-able' cup of frozen candy-like beverage. Disney uses several different companies for flavoring syrups and lemonade but this one is super simple; Monin for the syrups and Simply brand limeade. You may need to order your popping boba on...

Disney Cozy Movie Night: Haunted Mansion

  I think you all can pretty much surmise, I really love Disney. One of the only other things that can size up to that level of enthusiasm is Halloween. So when I get to combine the 2, it is simply euphoria! Last night's movie night featured Disney's Haunted Mansion. I absolutely love the Haunted Mansion ride and area in Disney World and the movie has always been one on my Halloween list.  To complete the festivities and level up the experience, I purchased a cute Haunted  Mansion mug from Spirit Halloween and ordered the  Funko Haunted Mansion Game . I also served a sweet soda family friendly beverage inspired by this year's Disney Halloween Spooky Apple Punch. It was simply green apple syrup and Sprite served over ice and garished with gummy worms and crushed candy straws. Bonus points if you have the poison apple glow cubes. Happy Haunts!
